What are "New Quizzes" in Canvas?

The "New" Quiz is the latest Quiz engine in Canvas, succeeding "Classic" Quizzes.
"New" Quizzes expand and improve the Canvas quiz experience while addressing a few critical bug fixes that were not possible in the older engine.
Instructure is no longer pushing updates to their original quiz format, now dubbed "Classic" Quizzes, and is instead focused on the development and refinement of New Quizzes moving forward. There are currently no plans from either Instructure or JMU to remove Classic Quizzes from Canvas. However, instructors are encouraged to migrate their Classic Quizzes to New Quizzes.
Migrating "Classic" Quizzes to "New" Quizzes
Instructure has made it easy to convert your Classic Quizzes into New Quizzes. The two most direct ways to do so are either to convert in bulk by selecting the check-box to "Convert content to New Quizzes" during the Course Copy/Import process or by "migrating" each Quiz individually. The "Migrate" option can be found from the "three dots" menu to the right of the name of a Classic Quiz within the Quizzes tab.
Migrating a Classic Quiz does not delete or alter the quiz during the migration process. Instead, a copy with the same name is made in the New Quiz format. The distinguishing characteristic between the two copies in your list of Quizzes is the "rocket ship" icon to the left of the name - a solid rocket ship indicates a New Quiz while a transparent rocket ship is a Classic Quiz.
New Quizzes function very similarly to Classic Quizzes. A few notable changes include an updated UI, additional Question types, the ability to assign Moderation settings by-student for all assessments in a Course, a revamped pathway to re-grading questions, and increased student response analytics. New Quizzes also fixes a flaw where existing copies of a Classic Quiz can be overwritten when copying between Canvas shells.
